Sous Chef at Locale at De Bortoli Wines Yarra Valley Estate.
Matt has been involved with the hospitality industry for over 10 years. After growing up on the Sunshine Coast, he completed his apprenticeship in 2006. In 2007, then took the opportunity to spend a winter at Falls Creek, Victoria and it was during this season that he caught the snow bug.
After the season Matt relocated to Melbourne and it was here that he first worked for the De Bortoli Family at their Yarra Valley Estate. After a brief stint in their restaurant, Matt decided to follow the snow, spending time in New Zealand and Canada.
Upon his return in 2009, he spent one last season at Falls Creek before again settling in Melbourne. Matt returned to work for De Bortoli Wines as Chef de partie and in April 2011, was promoted to Sous Chef.
Matt believes in developing relationships with local producers in order to get the best seasonal ingredients. He likes to produce dishes that reflect his belief in sustainability and seasonality while respecting the requirements of the modern hospitality business.
