Maintaining a traditional approach to cooking, Ian has seen food trends come and go, but his philosophy remains the same, ‘Keep it honest and flavorsome – it’s as simple as that.’ When Ian talks about food you can’t help but want to listen, to smell, to taste, to enjoy…He is simply a compelling personality with a wicked sense of humour and a slight stubborn streak – no new age philosophies are going to change the way this man cooks.

Ian is currently Executive Chef of The European, City Wine Shop, Melbourne Supper Club and Siglo Rooftop bar in Melbourne, four of the most iconic, popular and long-standing establishments Australia has ever seen.
