Adam joins Locale with a strong background in Italian cooking which fits in beautifully with the De Bortoli family’s philosophy of delicious food shared with good friends and of course, good wine.
Adam started his career in Queensland before heading overseas. He worked in French restaurants throughout the UK as well as in charming Italian restaurants in Italy such as Locanda I Girasoli (Adriatic coast) to the famous Il Marchesino restaurant housed in La Scala Opera House (Milan). This was where he honed his skills on the art of risotto and pasta making.
Returning to Australia, he worked at Grossi Florentino as a Sous chef before going across to Church St Enoteca, becoming head chef there in 2011. Each place has given him a good grounding in Italian food and allowed him to further refine his skills and technique. At the heart of it, his desire is to make good honest food, prepared simply in the classic Italian style.
His philosophy at Locale is to draw on Italian traditions using fresh seasonal produce and to leave diners with a lasting impression of the Yarra Valley. As he says “I am very excited to join the De Bortoli team here in the Yarra Valley and look forward to developing a constantly evolving menu, showcasing the seasons and abundance of quality produce available”.
He will be able to draw inspiration from a healthy vegetable garden and orchard within the vineyard “to highlight the beauty of fresh, regional food prepared simply, but memorably, in true Italian fashion”
Adam takes over from Heath Dumesny who after 5 years with us is taking a hiatus from cooking to travel around Australia with his young family.
